Gruyere Puffs

  • 1 cup chicken or vegetable broth
  • 1/2 cup butter
  • 1 cup flour
  • 1/2 t kosher salt
  • 4 eggs
  • 1 cup shredded gruyere cheese
  • 1/4 t fresh ground nutmeg

Preheat oven to 400°. Heat broth and butter in a saucepan until they reach a rolling boil.  Add flour all at once and stir vigorously over low heat until the mixture forms a ball. Remove from heat and beat the eggs in one at a time. Fold in the salt, 2/3 cup of the cheese and the nutmeg. Drop by tablespoonfuls onto greased cookie sheet, then sprinkle with remaining cheese. Bake for 30 to 40 minutes, or until nicely browned. Bake for 30 to 40 minutes, or until nicely browned.
